Ingredients
For the Pistachio Almond Base
- ½ cup almond flour
- 3 tbsp pistachio butter (unsweetened)
- 1½ tbsp maple syrup
- Pinch of sea salt
For the Ice Cream Layer
- ¾ cup chilled coconut whipping cream
- ¼ cup vegan sweetened condensed milk
- 3 tbsp sweetened pistachio cream
- 1 tsp vanilla extract
- Optional: ¼ tsp almond extract
For the Chocolate Shell
- 6 oz vegan dark or milk chocolate (your choice)
- 1 tsp coconut oil
For Drizzle and Garnish
- 2 tbsp dairy-free white chocolate
- 1 tbsp pistachio cream
- 1 tbsp finely chopped roasted pistachios
Instructions
Step 1: Make the Base
- In a bowl, mix almond flour, pistachio butter, maple syrup, and salt until doughy.
- Press evenly into silicone ice cream molds, about ¼ inch thick.
- Insert wooden popsicle sticks and freeze for 30 minutes.

Step 2: Prepare Ice Cream Layer
- Whip coconut cream until light and fluffy.
- Add condensed milk, pistachio cream, vanilla, and almond extract. Mix until silky smooth.
- Pour over the frozen base in the molds and freeze for at least 4 hours, or overnight.
Step 3: Coat with Chocolate
- Melt chocolate and coconut oil in a double boiler.
- Dip each unmolded ice cream bar into the chocolate, letting excess drip off.
- Place on a parchment-lined tray and freeze to set.
Step 4: Add Pistachio Drizzle
- Melt white chocolate with pistachio cream.
- Drizzle over frozen bars and top with chopped pistachios.
- Freeze again for 10 minutes before serving.
