Blackberry Coconut Bars

Blackberry Coconut Bars are a refreshing twist on classic coconut chocolate bars. Instead of a plain white coconut center, these bars have a naturally purple filling made with real blackberries. They are no-bake, vegan, and made with only a few simple ingredients.

The combination of juicy blackberries, tropical coconut, and rich dark chocolate creates a perfect balance between sweet and slightly tart flavors. They are ideal as a healthy dessert, a snack for busy days, or a beautiful homemade treat to impress guests.

These bars are also freezer-friendly, so you can make a batch ahead of time and enjoy them whenever you like.

Ingredients (Makes about 8 bars)

For the coconut filling:

  • 2 cups shredded coconut (unsweetened)
  • 1 cup fresh or frozen blackberries
  • 1/4 cup melted coconut oil or coconut butter
  • 1 pinch of salt

For the chocolate coating:

  • 1 cup dark chocolate chips or dark chocolate pieces

Step-by-Step Instructions

Step 1: Prepare the Blackberry Puree

Wash the blackberries well.
Blend them into a smooth puree using a blender or food processor.

If your berries have a lot of seeds and you want a smoother texture, pass the puree through a fine strainer to remove the seeds.

Step 2: Mix the Coconut Filling

In a large bowl, add:

  • Shredded coconut
  • Melted coconut oil
  • Blackberry puree
  • A pinch of salt

Mix everything very well until the coconut is fully coated and the mixture looks moist and holds together when pressed.

Step 3: Shape and Freeze

Line a small baking dish or tray with parchment paper.

Press the mixture firmly and evenly into the pan.
Use the back of a spoon to compact it well.

Place it in the freezer for 30 to 40 minutes, until it becomes firm.

Step 4: Cut into Bars

Remove the tray from the freezer once solid.
Lift the mixture out using the parchment paper and cut it into 8 bars (or smaller pieces if you prefer).

Return them to the freezer while you prepare the chocolate.

Step 5: Melt the Chocolate

Melt the dark chocolate using one of these methods:

  • In a heatproof bowl over simmering water
  • Or in the microwave, heating for short intervals and stirring in between

Make sure the chocolate becomes smooth and fully melted.

Step 6: Coat the Bars

Dip each frozen bar into the melted chocolate.
You can coat them fully or only the top and sides.

Let the excess chocolate drip off, then place them back onto the parchment paper.

Put the bars in the refrigerator for about 20–30 minutes, or until the chocolate coating becomes firm.
