Instructions
Prepare the Mascarpone Cream
In a mixing bowl, beat mascarpone and heavy cream until smooth and fluffy (about 2–3 minutes).
Add amaretto, cherry juice, and vanilla extract. Beat another 1–2 minutes.
Sweeten & Flavor the Mixture
In a separate bowl, mix granulated sugar and cherry preserves.
Add to mascarpone mixture and beat 1 more minute.
Gently fold in chopped cherries.
Soak & Layer the Ladyfingers
Combine extra amaretto and cherry juice in a shallow dish.
Quickly dip ladyfingers one by one—don’t over-soak!
Line the base of a 9×13” dish with the dipped ladyfingers.
Assemble the Tiramisu
Spread half the mascarpone cherry mixture over the ladyfingers.
Repeat with another layer of soaked ladyfingers.
Spread remaining mascarpone mixture on top.
Chill & Finish
Cover and refrigerate for at least 4 hours (preferably overnight).
Dust cocoa powder over the top using a mesh strainer.
Sprinkle with shaved dark chocolate before serving.
