Dark Chocolate Coconut Bites

I’ll just lay it all out there: I have fork-rolling-chocolate problems. And I die for dark chocolate. Especially dark chocolate coconut. It’s one of those combinations that just never fails—moist, dense, naturally sweetened coconut glory dunked in rich, silky dark chocolate. Sounds familiar? Sweet Cravings, Sweet Solutions

Even though I crave chocolate on a daily basis, I used to avoid rolling truffles because of the messy fork-dipping process. But then these coconut bites happened.

They’re the kind of little treat I like to keep hidden at the back of the fridge in a little container labeled—mentally, of course—with my name. They make the perfect post-dinner (or let’s be real: breakfast) snack.

Even though my rolling skills are still in development, I’ve basically formed a delicious habit.

My husband Bjork? Not a fan. He said: “Dark chocolate just doesn’t do it for me.”
Sad news for him. More bites for me.

Let’s Talk Coconut

Use desiccated coconut, not shredded sweetened coconut. You want that dry, finely shredded coconut meat texture. Toss it into your blender for a few pulses to make a thick, sticky powder. To sweeten, choose either honey or maple syrup. The maple gives that signature flavor (just like in our Spicy Maple Roast Carrots), while honey gives it a more floral note.

Pro Tip: Coconut Oil Is Key

You must use coconut oil for this recipe. It firms up beautifully in the fridge, helping the bites stay together. If you skip it or use other oils, you’ll end up with a crumbly mess.

Expect your hands to smell like coconut and your first few balls to look a bit odd. Embrace the process.

The Flavor Twist

Couldn’t decide between honey and maple syrup? Neither could I. So I made two batches—both were rich, naturally sweet, and had a flavor reminiscent of Almond Joy candies. I recommend keeping both options in your fridge, clearly marked for personal enjoyment.

Recipe: Dark Chocolate Coconut Bites

Ingredients

  • 2 cups desiccated coconut
  • 4 tbsp honey or maple syrup
  • 5 tbsp coconut oil
  • 1 tsp vanilla extract
  • 4 oz dark chocolate (chips or chopped)

Instructions

  1. Blend the coconut until it reaches a thick flour consistency.
  2. Mix the blended coconut with honey/maple syrup, coconut oil, and vanilla in a bowl until a thick paste forms.
  3. Shape into about 18 small balls by squeezing, not rolling. Chill in the refrigerator for 30 minutes until firm.
  4. Melt the dark chocolate gently (double boiler or in a stainless steel bowl in the oven).
  5. Dip the firm coconut balls into the melted chocolate using forks, then lay them on wax paper.
  6. Chill until the chocolate hardens. Store in the fridge.
