Ingredients
- 175 g icing sugar
- 1 × 200 g pack chocolate chunk cookies
- 9 regular‑size marshmallows
- Black writing icing
Instructions
- Sift the icing sugar into a large bowl, and add about 5 teaspoons of water. Mix to get a thick but pourable white icing.
- Line a tray or sheet with baking paper, or use a wooden board. Place the chocolate chunk cookies on it.
- One by one, dip the bottom of each marshmallow into the icing, and stick it in the centre of a cookie so it stays upright.
- Using a spoon, pour the white icing over each marshmallow, allowing it to drip down the sides a little so it looks like a ghostly sheet.
- Leave the icing to set. Once set, use black writing icing to draw two eyes and a mouth to make each ghost face.

Why These Ghost Cookies Are Special
- Visually festive: The marshmallows give height, and the flowing white icing makes each cookie look like a floating ghost.
- Simple ingredients: Most items you’ll already have in your baking cupboard or fridge.
- Kid‑friendly: Fun for children to help decorate.
- Quick to make: Less than an hour from start to finish if icing sets quickly.
Tips & Variations
- Use vanilla cookies instead of chocolate chunk for a lighter base.
- If marshmallows are large, cut them in half to get more ghosts per pack.
- Colour the icing lightly with pastel food colouring for a twist (e.g. pale green or lavender to make it more unusual).
- For dairy‑free or allergy‑friendly versions, try using vegan marshmallows and dairy‑free white chocolate or icing.
