Peach Delight — A Creamy No-Bake Summer Dessert

Peach Delight is a sweet, layered dessert that combines fresh summer peaches, creamy cheesecake filling, and a crunchy graham cracker crust. This no-bake treat is perfect for cookouts, family gatherings, or simply finishing a meal with a refreshing dessert.

Ingredients (for about 9 servings)

Crust

  • 1 package of graham crackers
  • 6 tablespoons butter, melted
  • ¼ cup brown sugar

Cheesecake Layer

  • 8 ounces cream cheese, softened
  • 1 container of whipped topping (such as Cool Whip)
  • ½ cup powdered sugar

Fresh Peach Layer

  • 1 cup water
  • ⅓ cup sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons orange gelatin powder
  • 4 cups fresh peaches, diced (dice right before using so they stay fresh)

Instructions

1. Make the Crust

  1. Break the graham crackers into pieces and crush them into fine crumbs with a food processor, blender, or rolling pin.
  2. In a bowl, mix the graham cracker crumbs with the melted butter and brown sugar until the crumbs are moist and stick together.
  3. Press this mixture firmly into the bottom of an 8–9-inch square pan to form an even crust.

2. Prepare the Cheesecake Layer

  1. In a mixing bowl, add the softened cream cheese and powdered sugar. Beat until smooth.
  2. Fold in the whipped topping and continue beating until the filling is creamy and free of lumps.
  3. Spread this cheesecake mixture evenly over the prepared graham cracker crust.
  4. Place the pan in the refrigerator while you prepare the peach layer.

3. Make the Fresh Peach Topping

  1. In a small saucepan, combine the water and cornstarch and whisk together — the mixture will start out milky.
  2. Heat over medium, stirring occasionally, until the mixture boils and becomes clear and slightly thickened.
  3. Remove from heat and stir in the orange gelatin powder until fully dissolved.
  4. Let this mixture cool for about 10–15 minutes in the fridge. Meanwhile, peel (if desired) and dice the fresh peaches.
  5. Once the gelatin mixture is cool, gently stir the diced peaches into it.

4. Assemble the Dessert

  1. Remove the pan from the fridge so the cheesecake layer has chilled a bit.
  2. Spoon the peach mixture carefully over the cheesecake layer and gently spread it evenly.
  3. Cover the pan with plastic wrap and place it back in the refrigerator.
  4. Chill for at least 1–2 hours before serving so the layers set.
