Snow Skin Matcha Mooncakes Recipe

A chewy, no-bake treat infused with earthy matcha and a creamy, flavorful filling.

Ingredients

For the Snow Skin:

  • 1/2 cup glutinous rice flour
  • 1/2 cup cornstarch
  • 1/4 cup sugar
  • 1 cup milk (or dairy-free alternative)
  • 1 tbsp vegetable oil
  • 1 tbsp matcha green tea powder

For the Filling:

  • 3/4 cup white bean paste or sweetened lotus seed paste
  • 1 tbsp matcha powder
  • Optional: 2 tbsp coconut butter for richness

Instructions

Step 1: Prepare the Filling

  1. Combine white bean paste with matcha powder until well incorporated.
  2. Roll into small balls (approx. 1 tbsp each) and refrigerate to firm up.

Step 2: Make the Snow Skin Dough

  1. In a bowl, whisk glutinous rice flour, cornstarch, sugar, and matcha powder.
  2. Add milk and oil. Stir until smooth.
  3. Pour into a heat-safe bowl and steam for 20 minutes.
  4. Once steamed, knead with a spatula until smooth and elastic.

Step 3: Assemble the Mooncakes

  1. Divide dough into small portions (around 30g each).
  2. Flatten each piece and wrap around a ball of filling.
  3. Press into a mooncake mold and gently release.
