Ingredients
For the Snow Skin:
- 1/2 cup glutinous rice flour
- 1/2 cup cornstarch
- 1/4 cup sugar
- 1 cup milk (or dairy-free alternative)
- 1 tbsp vegetable oil
- 1 tbsp matcha green tea powder
For the Filling:
- 3/4 cup white bean paste or sweetened lotus seed paste
- 1 tbsp matcha powder
- Optional: 2 tbsp coconut butter for richness
Instructions
Step 1: Prepare the Filling
- Combine white bean paste with matcha powder until well incorporated.
- Roll into small balls (approx. 1 tbsp each) and refrigerate to firm up.
Step 2: Make the Snow Skin Dough
- In a bowl, whisk glutinous rice flour, cornstarch, sugar, and matcha powder.
- Add milk and oil. Stir until smooth.
- Pour into a heat-safe bowl and steam for 20 minutes.
- Once steamed, knead with a spatula until smooth and elastic.
Step 3: Assemble the Mooncakes
- Divide dough into small portions (around 30g each).
- Flatten each piece and wrap around a ball of filling.
- Press into a mooncake mold and gently release.
